Potato Tot Stuffing

Ingredients

  • 1 bag Cavendish Farms Quick Crisp Potato Tots
  • 1lb sausage, casings removed
  • 1 small onion, finely chopped
  • 1 carrot, finely chopped
  • 2 celery stalk, finely chopped
  • 2 garlic cloves, minced
  • 1 tbsp sage, chopped
  • 1 tsp rosemary, chopped
  • 1 tbsp parsley, chopped
  • Salt and pepper, to taste

Directions

  1. Preheat air fryer to 400°F.
  2. Spread the Potato Tots in an air fryer basket and cook according to packaging instructions.
  3. Preheat oven to 375°F.
  4. To prep the stuffing, heat a large skillet over medium heat. Add sausage, breaking it up with a spoon and cook until browned, about 8 - 10 minutes. Transfer to a large bowl.
  5. Add onion, carrot, and celery to the skillet and sauté until softened, about 5–7 minutes. Stir in garlic, sage, rosemary, and parsley, cooking for 2 minutes until fragrant. Turn off heat and return cooked sausage to the pan. Season with salt and pepper to taste.
  6. Carefully mix in cooked Potato Tots.
  7. Transfer stuffing to a greased baking dish and bake uncovered for 15 minutes until golden brown.
  8. Serve hot and garnish with extra parsley if desired.
