Smoked Pork Breakfast Sandwich

1 lbsmoked pork loin
4-8eggs, poached, fried or scrambled
8Cavendish Farms Classic Hash Brown Patties
Spicy Tomato Compote
2 tbspolive oil
4tomatoes, diced
1chipotle pepper, chopped
1 tbspbrown sugar
3 tbspbalsamic vinegar
½ tsp crushed chili sauce
1 tbspparsley, chopped


  1. Heat Cavendish Farms Crispy Hash Brown Patties breakfast patties, following package directions.
    2. Thinly slice the pork loin and warm in a non-stick skillet or frying pan. Place slices of the warmed pork on top each Hash Brown Pattie. Top with eggs and spicy tomato compote.
    Note: Back bacon can be substituted for pork loin.
    Tomato Compote
    1. Sauté garlic in oil over medium heat for about a minute. Add tomatoes, brown sugar, chili sauce, salt, pepper, and parsley. Cook until tomatoes soften and compote reduces to a jam-like consistency.
    2. Add balsamic vinegar in final minute of cooking before serving.
