Creole Shrimp, Andouille Sausage and Potato Pan-fry

Ingredients
3 cupsRestaurant Style Diner Style Hash Browns
3 cups (31-40)shrimp, peeled, deveined, tail off
3 cupsandouille sausage, chopped
1½ cupsbell peppers, chopped
1½ cupsred onion, chopped
 ½ cupjalapeno, sliced (optional)
3 cupstomato sauce (optional)
2 tbspfresh garlic, minced
 ½ tsppaprika
 ¼ tspcayenne pepper
1 tspfresh oregano, finely chopped
1 tspfresh thyme, finely chopped
1 tbspextra virgin olive oil
1 pinchsalt
1 pinchpepper
4 sprigsfresh parsley

 


Directions
  1. Place Restaurant Style Diner Style Hash Browns and olive oil in a large non-stick frying pan on the stove top over medium-high heat and cook for 5-6 minutes stirring occasionally.
    2.Add sausage, peppers, onion and cook for another 2-3 minutes stirring occasionally.
    3.Add shrimp, jalapeno, all herbs & spices (except parsley) and cook for another 2-3 minutes stirring frequently.
    4.Add tomato sauce, stir and remove from stove top.
    5.Divide evenly on serving dishes, garnish with parsley, and serve.

 

Serves – 3 or 4
