Red Potato and Ground Beef Casserole

5 cupsSimply Homestyle Red Skin Diced Potatoes, frozen
1½ lbsground beef
1onion, chopped
1green bell pepper, chopped
4garlic cloves, finely chopped
 ½ tspdried chli pepper flakes
1 tspsalt
 ½ tspblack pepper
2 cupscheddar cheese, shredded
2 canscondensed cream of chicken soup
1onion, chopped
 ¾ cuplight cream
 ½ cupsour cream
 ¼ cupparmesan ceese, grated
1 tspgarlic powder
 ¼ tspsalt
 ¼ tspblack pepper


  1. Preheat oven to 350°F. Grease 13x9-inch baking dish.
    2. In a large non-stick skillet or frying pan, sauté ground beef with onion, bell pepper and chili flakes until thoroughly cooked, not brown. Drain fat.
    3. In a bowl, combine soup, onion, milk, sour cream, parmesan cheese, garlic powder, salt and black pepper.
    4. In a baking dish, start with a layer of Simply Homestyle Red Skin Diced Potatoes on bottom, then soup mixture, ending with the ground beef mixture on top.
    5. Bake, covered with foil, for 1 hour.
    6. Uncover and continue baking for another 20-30 minutes or until potatoes are tender.
    7. Remove from oven then sprinkle with grated cheddar cheese and return to oven for 4-5 minutes or until the cheese has melted.
