Cherry Tomatoes and Ricotta Cheese Potato Toppers

Featuring Restaurant Style Foil Wrapped Potatoes

 


Ingredients 

1 cupCherry tomatoes
1 Package Restaurant Style Foil Wrapped Potatoes 3-Pack
2/3 cupRicotta cheese
2 tbspChives

Note: The Restaurant Style Foil Wrapped Potatoes can also be cooked on the BBQ! See the bottom of the package for instructions.  


Directions

  1. Preheat oven to 375°F and place foil wrapped potatoes directly on the oven rack and bake for 55-65 minutes or until desired tenderness. 
  2. Remove potatoes from the oven and unwrap foil, being cautious of heat and steam. 
  3. Cut a slit down to top center of each potato and fluff potatoes inside with a fork.
  4. Take the ricotta cheese, diced tomatoes, chives, and add to each potato and serve!
