Louisiana Chicken and Potato Chowder

1 TbspOlive Oil
1 cupChicken, cut into small cubes
½ cupOnion, chopped
½ cupBell Pepper, chopped
¼ pkg Simply Homestyle Heart Red Skin Diced
1¾ cupChicken Broth
3 tspCajun Seasoning
1 TbspAll-Purpose Flour
1 TbspWater
1¾ cupTomato, chopped
1 eachTopping (Tea Biscuit), optional



  1. Heat oil in a large non-stick skillet or frying pan over medium heat. Add chicken, onion and green pepper. Cook, stirring occasionally, until chicken is cooked through (about 6 minutes).
  2. Add From the Hearty Red Skin Diced Potatoes, broth and Cajun seasoning. Bring to a boil. Reduce heat to low. Cook 20 to 25 minutes, stirring occasionally, until potatoes are tender.
  3. In small bowl, add flour and water and mix thoroughly until smooth. Slowly add mixture to the pan while stirring.
  4. Stir in tomatoes. Cook until mixture is thickened and heated through.
