Blackened Chicken & Potato Tacos

4 cupsSimply Homestyle Red Skin Diced
¼ cupVegetable Oil
2 cupsBlackened chicken, cooked, prepped & cut into cubes
½ cupWhite onion, small diced
½  cupGreen pepper, small diced
½ cupTomato diced
1 cupShredded cheddar
½ cupSalsa
½ cupSour cream
Taco shells


  1. Place Hearty Red Skin Diced Potatoes and vegetable oil in a large non-stick frying pan on the stove top over medium-high heat and cook for 5-6 minutes, stirring occasionally. 
  2. Add onions and cook for 2-3 minutes, stirring occasionally. 
  3. Add peppers and cook for an additional 2-3 minutes. 
  4. Place tomatoes and cheddar into pan and stir continuously for one minute.
  5. Remove pan from heat and stir in salsa and sour cream. 
  6. Evenly distribute mixture into the taco shells and serve.

 Serves – 3 to 4
