Chipotle Sloppy Joe Sliders with Zesty Coleslaw

Ingredients

Chipotle Sloppy Joes 
1 lblean ground beef
¼ cup onion, chopped
¾ cupketchup
 ¼ cupfrozen corn
 ¼ cupcanned black beans
 ½ cuptomato sauce
1chipotle pepper, minced
 ½ tspground cumin
 ¼ cupcilantro, chopped
 ¼ tspsalt
 ¼ tspblack pepper
 
 Coleslaw
¼ cup paint yogurt
1 tbspmayonnaise
2 tspapple cider vinegar
 ¼ tsphot pepper sauce
 ¼ tspsalt
1½ cupspackaged coleslaw mix
 ½red bell pepper, thinly sliced
  
For serving 
4hamburger buns
4 cupsCavendish Farms Crinkle Cut Fries, prepped
  
  

 


Directions

  1. Coleslaw

    1. In a small bowl, combine yogurt, mayonnaise, vinegar, hot pepper sauce and salt.
    2. Stir in coleslaw mix and bell pepper until well coated. Season with black pepper, to taste. Refrigerate, covered, until ready to serve.

    Chipotle Sloppy Joes
    1. Brown ground beef and onion in large non-stick skillet or frying pan over medium heat until beef is cooked through. Drain the fat.
    2. Add in ketchup, corn, beans, tomato sauce, chipotle peppers, and cumin. Bring to a boil.
    3. Reduce heat and simmer for 5 minutes, stirring often.
    4. Sprinkle in cilantro, salt, and black pepper.
    5. To serve, place beef mixture on bottom half of each bun. Top with Cavendish Crinkle Cut Fries and then coleslaw.
