1 bagSimply Homestyle™ Hearty Red Skin Diced
1½ cupsBacon, cooked, chopped
2 cupsBell Peppers, rough chop
1 cupRed Onion, chopped
1½ cupsPlum Tomato, chopped
2 tbspFresh Garlic
2 tbspFresh Dill
½ eachFresh Lemon, juice of
¾ cupMayonnaise
1 pinchSalt
1 pinchPepper


  1. Preheat oven to 450°F. Spread Hearty Red Skin Diced Potatoes in a single layer on a non-stick baking sheet. Place in oven and cook for 12 minutes.
  2. Turn-over and cook for another 7-9 minutes or until desired doneness.
  3. Remove and allow potatoes to cool; then place in the refrigerator.
  4. Place cooled potatoes, bacon, peppers, onion, garlic, dill and mayonnaise in a mixing bowl and mix ensuring all ingredients are coated.
  5. Add tomato, salt, pepper, lemon and mix gently.
  6. Refrigerate until needed or serve.

 Serves – 5 to 6
