Cheesy Potato and Bacon Breakfast Casserole

Ingredients

 

½ pkgTMSimply Homestyle Golden Harvest Wedges
1 cupCream, 35%
½ cupCheddar Cheese, shredded
½ cupSour Cream
½ cupMushrooms
6 SlicesBacon, cooked and crumbled
3 tspGreen Onion, finely chopped
3 tspFresh chopped Parsley, finely chopped

 


Directions

  1. In a medium non-stick frying pan or skillet cook bacon until crisp. Drain grease and chop. 
  2. Heat oven to 350°F. 
  3. In a mixing bowl, add bacon, Simply Homestyle Golden Harvest Wedges, all remaining ingredients and mix until well blended. 
  4. Spread mixture into roasting pan or casserole dish. 
  5. Cover and bake for 45 minutes or until potatoes are tender.
