Ingredients

 

1 pkgTMSimply Homestyle Hearty Red Skin Diced
¼ cupOnion, chopped
1¾ cupChicken Stock
5/8 cupCream, 35% (cream of chicken soup can be substituted)
3/8 cupCream Cheese, cubed, softened
½ cupBacon, cooked and crumbled
3 tspChives, chopped
3 tspFreshly Grated Parmesan

 


Directions

  1. Combine Simply Homestyle Hearty Red Skin Diced, onions, broth, and cream in slow cooker.
  2. Cover and cook on low 8-10 hours or until potatoes are tender.
  3. Add cream cheese and blend.
  4. Top with bacon, parmesan and chives before serving.
 

Make in advance and re-heat as needed for a quick and easy lunch.
