Ham and Root Vegetable Quiche

½ cupCavendish Farms Hash Brown Potatoes
2 tbspparsnips, finely diced
2 tbspsquash, finely diced
2 tbspturnip, finely diced
3 tbspcarrots, finely diced
¼ cupham, finely diced
2 tspfresh thyme, finely chopped
2 tspgarlic, minced
1pie crust, made or bought
2 tbspgrated parmesan cheese
1 tbspbutter
1 pinchsalt
1 pinchpepper


  1. Preheat oven to 350ºF.
  2. Preheat a large non-stick frying pan on the stove top over medium-high heat.
  3. Add butter, Hash Brown Potatoes, ham and all remaining vegetables.
  4. Cook for 4-5 minutes stirring frequently. Remove and allow mixture to cool to room temperature.
  5. Once cooled, place mixture into a mixing bowl and add eggs, thyme, and garlic. Season with salt and pepper and mix well.
  6. Firmly line quiche dish with crust.
  7. Place mixture into pie crust lined quiche dish.
  8. Sprinkle Parmesan cheese over top of mixture.
  9. Place in preheated oven for 30 minutes or until mixture has set (or follow provided crust instructions).
  10. Remove and serve.
