Pulled Pork Sandwich and Coleslaw

Ingredients
Dry Rub
3 tbsppaprika
1 tbspgarlic powder
1 tbspbrown sugar
1 tbspdry mustard
2 tbspcourse sea salt
5-7 lbpork shoulder roast
  
Cider-vinegar BBQ sauce 
1½ cupscider vinegar
1 cupyellow mustard
 ½ cupketchup
1/3 cupbrown sugar
2 tspbaking powder
2garlic cloves, smashed
1 tspsalt
1 tspcayenne pepper
 ½ tspblack pepper
  
 Coleslaw 
1coleslaw mix, packaged
1½ cupsmayonnaise
 ¼ cupDijon mustard
1 tbspcider vinegar
1lemon, juiced
 ½ tsphot sauce
 ¼ tspsalt
 ¼ tspblack pepper
  
 For serving
12hamburger buns

Directions

  1. Pulled Pork
    Note: Allow for 6 hours roasting time.
    1. Preheat oven to 350°F.
    2. In a small bowl, mix paprika, garlic powder, brown sugar, dry mustard and salt together.
    3. Rub the spice blend all over the pork. Cover and refrigerate for at least 1 hour.
    4. Put the pork in a roasting pan and roast for about 6 hours or until meat falls apart.
    5. Combine the vinegar, mustard, ketchup, brown sugar, garlic, salt, cayenne and black pepper in a saucepan over medium heat. Simmer gently, stirring, for 10 minutes until the sugar dissolves. Take off the heat and set aside.
    6. Once pork is cooked, take out of the oven and let stand for 10 minutes on a platter.
    7. Deglaze the roasting pan over medium heat with ¾ cup of water, scraping with a wooden spoon to free up browned bits. Reduce by about half. Pour into the saucepan with the barbecue sauce and simmer for 5 minutes.
    8. While the pork is still warm, use two forks to “pull” or shred the meat into bite-size pieces.
    9. Once shredded, put the pork in a bowl and pour half the sauce over it, until completely coated.

    Coleslaw
    Note: For best results, prepare 2 hours in advance.
    1. In large bowl, stir together the mayonnaise, mustard, vinegar, lemon juice and sugar.
    2. Combine wet mixture with package coleslaw mix. Chill.

    For Serving
    1. Spoon pulled pork onto bottom half of each hamburger bun. Top with coleslaw and top half of bun. Serve with Cavendish Farms Straight Cut Fries and use remaining sauce for dipping.
