Crinkle Chips

Ingredients
- 1 bag Cavendish Farms Quick Crisp Crinkle Chips
- 7 tbsp extra-virgin olive oil, divided
- 3 large garlic cloves, divided (2 whole, 1 thinly sliced)
- 1 large rosemary sprig
- 3 - 4 strips lemon peel
- 1 can (540 ml / 15 oz) cannellini beans, drained and rinsed
- Salt and pepper, to taste
- 1/2 teaspoon paprika
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 lemon, juiced
- 2 ice cubes
- Parsley, chopped (for garnish)
Directions
- Preheat air fryer to 400°F.
- Spread Crinkle Chips in air fryer basket and cook according to packaging instructions.
- To prep, heat 4 tbsp olive oil in a small to medium saucepan over medium-low heat. Add whole garlic cloves, rosemary sprig, and lemon peel. Cook for 1-2 minutes, stirring, until fragrant.
- Add cannellini beans to the saucepan and season lightly with salt and pepper. Cook for 3–4 minutes, stirring occasionally, until beans are sizzling and warmed through. Remove from heat and discard rosemary and lemon peel.
- Transfer warm bean mixture (with infused oil and garlic) to a food processor. Clean the saucepan to remove any bean residue.
- Heat 2 tbsp olive oil in the same saucepan over medium heat. Add sliced garlic and cook for about 1 minute, stirring constantly. Add paprika and optional red pepper flakes, and cook for 1–2 minutes more, until garlic is golden and just crisp and spices are fragrant. Remove from heat.
- Return to the food processor and add remaining 1 tbsp olive oil, lemon juice and ice cubes. Blend until smooth and creamy, scraping down sides as needed. Adjust seasoning with additional lemon juice, salt, and pepper to taste.
- Spoon bean dip into a serving bowl and top with the infused crispy garlic oil and chopped parsley. Serve with cooked Crinkle Chips for dipping!
