Crinkle Cut Fry-Tatta

Ingredients

  • 1 bag Cavendish Farms FlavourCrisp Classic Crinkle Cut Fries
  • 8 large eggs
  • 1/2 cup milk
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1/2 cup ramps or green onions, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup arugula, divided
  • 1/2 cup white cheddar, shredded
  • 1/4 cup goat cheese, crumbled

Directions

  1. Preheat air fryer to 400°F.
  2. Spread Crinkle Cut Fries in air fryer basket and cook according to packaging instructions.
  3. Preheat oven to 375°F.
  4. To prep, whisk eggs, milk, salt, and pepper in a large bowl until well combined.
  5. Heat olive oil in an oven-safe, nonstick skillet or well-seasoned cast iron pan over medium heat. Add ramps or green onions and cook for 1-2 minutes until softened. Stir in cherry tomatoes and half the arugula, cooking for another 1-2 minutes.
  6. Add 2 cups cooked Crinkle Cut Fries to the skillet and spread into an even layer. Pour egg mixture on top. Sprinkle with cheddar and goat cheese.
  7. Cook on stovetop over medium-low heat for 2-3 minutes, until edges begin to set. Transfer skillet to oven and bake for about 15-18 minutes, until fry-tatta is fully set and lightly golden.
  8. Top with remaining arugula, then slice and serve!
