Classic Crinkle Cut Fries

Ingredients
- 1 bag Cavendish Farms FlavourCrisp Classic Crinkle Cut Fries
- 8 large eggs
- 1/2 cup milk
- Salt and pepper, to taste
- 2 tbsp olive oil
- 1/2 cup ramps or green onions, thinly sliced
- 1 cup cherry tomatoes, halved
- 1 cup arugula, divided
- 1/2 cup white cheddar, shredded
- 1/4 cup goat cheese, crumbled
Directions
- Preheat air fryer to 400°F.
- Spread Crinkle Cut Fries in air fryer basket and cook according to packaging instructions.
- Preheat oven to 375°F.
- To prep, whisk eggs, milk, salt, and pepper in a large bowl until well combined.
- Heat olive oil in an oven-safe, nonstick skillet or well-seasoned cast iron pan over medium heat. Add ramps or green onions and cook for 1-2 minutes until softened. Stir in cherry tomatoes and half the arugula, cooking for another 1-2 minutes.
- Add 2 cups cooked Crinkle Cut Fries to the skillet and spread into an even layer. Pour egg mixture on top. Sprinkle with cheddar and goat cheese.
- Cook on stovetop over medium-low heat for 2-3 minutes, until edges begin to set. Transfer skillet to oven and bake for about 15-18 minutes, until fry-tatta is fully set and lightly golden.
- Top with remaining arugula, then slice and serve!
