Classic Crinkle Cut Fries

Ingredients
- 1 bag Cavendish Farms FlavourCrisp Classic Crinkle Cut Fries
- 2 boneless, skinless chicken breasts, butterflied in half and pounded 1/4-inch thick
- Salt and pepper, to taste
- 1/2 cup all-purpose flour
- 1 large egg, beaten
- 1 1/2 cups panko
- 1/3 cup neutral oil
- 1/3 cup mayonnaise
- Juice of 1/2 lemon, plus more for serving
- 1 tbsp grainy mustard
- 1 apple, thinly sliced
- 1 small fennel bulb, thinly sliced, fronds reserved
- 2 stalks celery, thinly sliced on a bias
- 1/2 red onion, thinly sliced
Directions
- Preheat air fryer to 400°F.
- Spread Crinkle Cut Fries in the air fryer basket and cook according to packaging instructions.
- To prep, season chicken with salt and pepper.
- For the breading, dredge each chicken breast in flour, shaking off any excess. Then, transfer into the beaten egg and coat in panko, pressing lightly to ensure the breadcrumbs adhere. Set aside.
- Heat oil in a large skillet over medium heat. Pan-fry chicken until golden brown and cooked through, about 2 - 3 minutes per side. Transfer schnitzel to a paper towel-lined plate.
- For the slaw, whisk mayonnaise, lemon juice, and grainy mustard in a mixing bowl. Add apple, fennel, celery, and onion, tossing to coat evenly. Season with salt and pepper to taste.
- Plate crispy schnitzel with cooked Crinkle Cut Fries and slaw. Garnish with reserve fronds and serve immediately with lemon wedges!
