Ingredients
- 1 bag Cavendish Farms Mini Quick Cook Hash Brown Patties
- 2 cups panko breadcrumbs
- 2 tbsp extra-virgin olive oil
- 1 tsp garlic powder
- Salt and pepper, to taste
- 1 cup all-purpose flour
- 2 large eggs
- 1 lb raw shrimp, peeled and deveined
- 4 tbsp mayonnaise
- 4 tbsp sweet chili sauce
- 2 tbsp sriracha
- Juice of 1 lime
- 2 tsp honey
- Cilantro, chopped (for garnish)
- Jalapeños, sliced (optional, for garnish)
Directions
- Preheat air fryer to 400°F.
- Spread Mini Hash Brown in the air fryer basket and cook according to packaging instructions.
- To prep, combine panko, olive oil, garlic powder, salt, and pepper in a shallow bowl. In a separate shallow bowl, add flour. In a third bowl, add eggs and whisk.
- Using tongs, coat each shrimp. Dredge first in flour, then dip in egg, and coat evenly with panko mixture. Place shrimp in a separate air fryer basket and cook at 400°F for 8 – 10 minutes, flipping halfway, until golden and crispy.
- While the shrimp cooks, whisk together mayonnaise, sweet chili sauce, sriracha, lime juice, honey, and salt in a medium mixing bowl to make bang bang sauce.
- To serve, top each cooked Mini Hash Brown with 1 – 2 crispy shrimp. Drizzle with bang bang sauce and garnish with chopped cilantro and optional sliced jalapeños.
