High Protein Hash Brown Toast

Ingredients

  • 1 bag Cavendish Farms All-Day Breakfast Original Hash Brown Patties
  • 1 tbsp neutral oil
  • 6 eggs
  • Salt and pepper, to taste
  • 1 avocado, mashed
  • 1 cup cottage cheese
  • Chili flakes (for garnish)
  • Everything Bagel Seasoning (for garnish)

Directions

  1. Preheat air fryer to 400°F.
  2. Spread Hash Brown Patties in air fryer basket and cook according to packaging instructions.
  3. Meanwhile, scramble the eggs. Heat oil in a non-stick skillet over medium-low heat. Crack eggs into a bowl and whisk. Pour into the skillet and stir gently with a spatula until just set. Remove from heat and season with salt and pepper to taste.
  4. To assemble the toasts, top each cooked Hash Brown Patty with mashed avocado, a scoop of cottage cheese, and scrambled eggs.
  5. Garnish and serve. Sprinkle with chili flakes and Everything Bagel seasoning.
