Lobster Bisque Poutine

Ingredients

  • 1 bag of Cavendish Farms Quick Crisp Slim Steak Cut Fries
  • 2 tbsp butter
  • 1 shallot
  • 1 garlic clove
  • 1 tbsp tomato paste
  • 2 tbsp all-purpose flour
  • 2 cups seafood stock
  • ½ cup heavy cream
  • 1 lobster, cooked
  • 1 cup cheese curds
  • Chives, for garnish
  • Salt and pepper, to taste

Directions

  1. Preheat air fryer to 400°F.
  2. Spread Steak Cut Fries in the air fryer basket and cook according to packaging instructions.
  3. To prep, roughly mince shallot, garlic and chives and set aside.
  4. To prep bisque: Melt butter in a saucepan over medium heat. Add shallot and garlic and cook until softened. Stir in tomato paste and cook for 1 minute. Sprinkle in flour and whisk until combined for another minute. Gradually whisk in seafood stock.
  5. Simmer the bisque for about 5-7 minutes or until thickened. Stir in heavy cream and season with salt and pepper. Add lobster meat. Simmer for another 2-3 minutes.
  6. Serve cooked Steak Cut Fries topped with cheese curds and hot lobster bisque. Garnish with chives.
