Peruvian Beef Stir Fry with Straight Cut Fries

Crispy Classic Straight Cut Fries
Made from premium potatoes, this classic French fry is sure to be a quick and convenient crowd pleaser. Perfect as a snack, side, or ingredient in your favourite recipe. Made in Canada from domestic and imported ingredients.
Ingredients
- 1 bag Cavendish Farms Straight Cut Fries
- 1 lb skirt steak or flank steak, sliced into 1/2-inch strips
- 2 tbsp soy sauce
- 1 tbsp apple cider vinegar
- Salt and pepper, to taste
- 2 tbsp neutral oil, divided
- 1 small red onion, cut into thick wedges
- 4 scallions, cut into 2-inch pieces
- 2 medium tomatoes, cored and cut into wedges
- 2 garlic cloves, minced
- 1 tsp ginger, minced
- Rice, steamed (for serving)
- Cilantro, chopped (to garnish)
Directions
- Preheat air fryer to 400°F.
- Spread Straight Cut Fries in the air fryer basket and cook according to packaging instructions.
- To prep, place sliced steak in a medium mixing bowl and toss with soy sauce, vinegar, salt, and pepper. Let marinate for 10 minutes.
- Heat 1 tbsp oil in a large skillet or wok over high heat. Working in batches, add the marinated beef. Cook about 1 - 2 minutes per side, until browned. Remove from skillet and set aside.
- Add remaining oil to the empty skillet. Heat until smoking.
- Sauté onion for 1 - 2 minutes until tender and crisp. Add scallions and tomatoes cooking for an additional minute. Add garlic and ginger, stirring constantly, until lightly sautéed and fragrant. Turn off heat.
- Return beef to skillet and toss to combine. Adjust seasoning to taste.
- Serve stir fry over cooked rice with cooked Straight Cut Fries. Garnish with fresh cilantro!
