Sheet Pan Hash Brown Breakfast Sandwiches

Ingredients

  • 1 bag Cavendish Farms All-Day Breakfast Original Hash Brown Patties
  • 12 large eggs
  • 1/4 cup milk
  • Salt and pepper, to taste
  • 2 tbsp unsalted butter, melted
  • 1 1/2 cups cheddar cheese, shredded
  • 6 baby bell peppers, thinly sliced
  • 3 scallions, thinly sliced
  • 9 slices bacon, roughly chopped
  • Sriracha (optional, for serving)
  • 9 slices bread, toasted

Directions

  1. Preheat oven to 450°F.
  2. Spread Hash Brown Patties in a 3x3 grid on a rimmed sheet pan and cook according to packaging instructions.
  3. To prep, whisk eggs, milk, salt, and pepper in a large bowl.
  4. Remove sheet pan from the oven and brush the empty spaces with melted butter. Pour the egg mixture around the cooked Hash Brown Patties. Top eggs with cheddar, bell peppers, and scallions. Place chopped bacon on each cooked Hash Brown Patty.
  5. Return sheet pan to the oven, baking until the eggs are set, about 8 - 10 minutes.
  6. Drizzle eggs with optional sriracha. Cut into 9 portions with a spatula and serve open-faced on a toasted bread slice.
