Slow Cooker Fajita Fries

Ingredients

  • 1 bag Cavendish Farms FlavourCrisp Classic Crinkle Cut Fries
  • 4 boneless, skinless chicken breasts
  • 2 - 3 bell peppers, cored and sliced
  • 1 large yellow onion, sliced
  • 1 small can (10 oz) finely chopped tomatoes
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • Monterey Jack, shredded, to serve
  • Guacamole, to serve
  • Sour cream, to serve
  • Lime, to serve

Directions

  1. Preheat air fryer to 400°F.
  2. Spread Crinkle Cut Fries in the air fryer basket and cook according to packaging instructions.
  3. To prep the fajita mixture, place chicken breasts, bell peppers, onion, canned tomatoes, chili powder, cumin, paprika, garlic powder, oregano, salt, and pepper into a slow cooker. Stir to combine.
  4. Cover and cook on high heat about 2 - 3 hours or low heat 4 - 6 hours, until chicken is tender and cooked through. Remove chicken from slow cooker and slice. Return to the pot until ready to serve. Drain any excess liquid, if desired.
  5. To assemble, add the fajita chicken and vegetables to cooked Crinkle Cut Fries. Top with shredded Monterey Jack and serve with guacamole, sour cream, and lime!
