Cheesy Pizza Potato Tot Cups

Ingredients

  • 1 bag of Cavendish Farms Quick Crisp Potato Tots
  • 1/2 cup tomato sauce, divided
  • 1 cup mozzarella cheese, shredded
  • 12 slices pepperoni
  • 1/2 tsp dried oregano
  • Fresh basil leaves, sliced

Directions

  1. Preheat oven to 450°F.
  2. Grease a 12-cup muffin tin. Place 3-4 Potato Tots in each muffin tin and cook according to packaging instructions. 
  3. Use a spoon to press the cooked Potato Tots into the bottom and side to form a cup.
  4. Add 1 tbsp tomato sauce, mozzarella cheese, and a slice of pepperoni to each cooked Potato Tot cup. Sprinkle with oregano.
  5. Bake for another 5 minutes, or until cheese is melted and bubbly.
  6. Let cool slightly before serving. Finish with freshly chopped basil!
