Chorrillana (Chilean Steak & Eggs with Fries)

Ingredients

  • 1 bag Cavendish Farms Quick Crisp Slim Steak Cut Fries
  • 10-12 oz sirloin steak
  • Salt and pepper, to taste
  • 2 tbsp olive oil, divided
  • 1 large onion, thinly sliced
  • 2 large eggs
  • 1/2 tsp paprika (for garnish)
  • Parsley, chopped (for garnish)

Directions

  1. Preheat air fryer to 400°F.
  2. Spread Slim Steak Cut Fries in air fryer basket and cook according to packaging instructions.
  3. Preheat BBQ to high heat.
  4. To prep, season steak generously with salt and pepper.
  5. Grill steak about 3-5 minutes per side for medium-rare, or until desired doneness. Transfer to a cutting board and rest 5 minutes before slicing thinly against the grain.
  6. While steak rests, heat a skillet over medium heat with 1 tbsp olive oil. Add sliced onion and cook 5-7 minutes until softened and lightly caramelized. Transfer to a bowl and set aside.
  7. In the same skillet, add remaining olive oil. Crack eggs into the pan and cook until whites are set and yolks remain runny, about 3 minutes. Season lightly with salt and pepper.
  8. Arrange cooked Slim Steak Cut Fries on a serving platter. Top with caramelized onions, sliced steak, and fried eggs. Finish with paprika and parsley before serving.
