Easy Caprese Tots

Ingredients

  • 1 bag of Cavendish Farms Quick Crisp Potato Tots
  • 1 cup mini bocconcini
  • 2 tbsp olive oil
  • 1/4 tsp red pepper flakes
  • 1/4 tsp oregano
  • 1 cup cherry tomatoes
  • Fresh basil leaves
  • Salt and pepper, to taste
  • Balsamic glaze, to serve

Directions

  1. Preheat air fryer to 400°F.
  2. Spread Potato Tots in an air fryer basket and cook according to packaging instructions.
  3. In a bowl, mix bocconcini with olive oil, red pepper flakes, oregano, salt, and pepper. Marinate for 5 minutes.
  4. Thread one cooked Potato Tot, one cherry tomato, one basil leaf, and one marinated bocconcini onto small skewers.
  5. Serve with balsamic glaze for dipping.
