Hash Brown Waffle Benedict

Ingredients

  • 1 bag of Cavendish Farms All-Day Breakfast Hash Brown Waffles
  • 2 whole eggs
  • 2 slices of your favourite ham
  • 1 cup of your favourite fruit
  • 3 egg yolks
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon salt
  • ½ cup melted unsalted butter
  • 1 teaspoon of chives, roughly chopped
  • 1 teaspoon vinegar
  • Salt and pepper, to season

Directions

  1. Preheat air fryer to 400°F.
  2. Spread a single layer Cavendish Farms All-Day Breakfast Hash Brown Waffles in air fryer and cook according to package directions.
  3. To make poached eggs, bring a large pot of water to boil, then reduce heat to low. Stir the vinegar into the water and create a vortex. Crack the egg to the middle of the vortex and cook for 3 minutes.
  4. Remove the egg after 3 minutes, placing into ice water to stop the egg from cooking and set aside.
  5. To make hollandaise sauce, add egg yolk, lemon juice, Dijon mustard and salt into a blender and blend for 5 minutes. With the blender running on medium high, slowly stream the hot butter into the mixture until emulsified.
  6. Assemble your eggs benedict by layering one Cavendish Farms All-Day Breakfast Hash Brown Waffles, one slice of your favourite ham, one poached egg and a drizzle of hollandaise sauce. Garnish with chives and serve with a side of your favourite fruit!
