Jalapeño Popper Tot Cups

Ingredients

  • 1 bag Cavendish Farms Quick Crisp Potato Tots
  • 6 slices bacon, cooked and crumbled
  • 4 oz cream cheese, softened
  • 1 cup cheddar cheese, shredded
  • 1 cup Monterey Jack, shredded
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • 2 jalapeños, seeded and chopped (plus more for garnish)
  • Cilantro, chopped (garnish)

Directions

  1. Preheat oven to 450°F.
  2. Grease a 12-cup muffin tin. Place 3 - 4 Potato Tots in each muffin tin and cook according to packaging instructions.
  3. Use a spoon to press the cooked Potato Tots into the bottom and side to form a cup.
  4. To prep, combine bacon, cream cheese, cheddar cheese, Monterey Jack, garlic powder, salt, pepper, and jalapeños in a mixing bowl.
  5. Fill each cooked Potato Tot cup with cheese mixture and top with additional jalapeño slices if desired.
  6. Bake for another 5 to 10 minutes, or until cheese is melted and bubbly.
  7. Let cool slightly before serving. Finish with freshly chopped cilantro!
