Loaded Breakfast Poutine with Hollandaise Sauce

Ingredients

  • 1 bag of Cavendish Farms Quick Crisp Potato Tots
  • 2 breakfast sausages, casings removed
  • 4 slices bacon
  • 4 eggs
  • 1/2 cup melted butter
  • 2 egg yolks
  • 1 and 1/2 tbsp lemon juice
  • 1 tsp cayenne (optional)
  • 1/2 cup cheddar cheese curds
  • 2 green onions, sliced
  • Salt and pepper, to taste

Directions

  1. Preheat air fryer to 400°F.
  2. Spread Potato Tots in the air fryer basket and cook according to packaging instructions.
  3. In a skillet over medium heat, cook sausage until browned and crumbled. Remove and set aside.
  4. In the same skillet, fry bacon until crispy. Drain on paper towel and crumble.
  5. Crack the 4 eggs into a bowl, season with salt and pepper, and scramble in a nonstick skillet until just set. Set aside.
  6. To prep hollandaise, melt butter and skim off solids. In a separate deep cup, blend egg yolks, lemon juice, and pinch of salt with an immersion blender. Once combined, slowly add the hot melted butter while continuing to blend until the sauce becomes thick and glossy. Season with a pinch of cayenne. 
  7. Assemble poutine by layering cooked Potato Tots on a plate and top with scrambled eggs, browned sausage, bacon, and cheddar cheese curds.
  8. Drizzle with warm hollandaise and garnish with sliced green onions.
