Potato Tots

Ingredients
- 1 bag of Cavendish Farms Quick Crisp Potato Tots
- 1 cup ground beef
- 10 eggs
- 1 cup milk
- ½ cup sour cream
- 1 green onion
- 1 red pepper
- 2 cup shredded cheese of choice
- 1 tablespoon olive oil
- Salt & pepper, to season
Directions
- Preheat oven to 350°F.
- To prep, chop red pepper into small cubes, cut bacon into small chunks, and roughly chop green onion and set aside.
- To medium heat pan, add ground beef and cook for 8 minutes or until ground beef is well done and set aside.
- In a large bowl, whisk together eggs, milk, sour cream, salt, and pepper until smooth. Stir in red pepper, 1 cup shredded cheese, cooked ground beef and green onion and set aside.
- In a 13 x 9” casserole dish, spread olive oil to coat the dish.
- Pour the egg mixture into the casserole dish evenly. Place Potato Tots on top of the egg mixture. Sprinkle remaining cheese on Potato Tots.
- Preheat air fryer to 400°F.
- Spread frozen Potato Tots in air fryer basket and cook according to packaging instructions.
- Bake egg mixture in pre heated oven for 15 minutes or until egg mixture is cooked through.
- To serve, garnish remaining green onion and cooked Potato Tots and enjoy!
