Vegetarian Green Bean Casserole with Crispy Onion Rings

Ingredients

  • 1 bag Cavendish Farms Quick Crisp Onion Rings
  • 1 lb green beans, trimmed and halved
  • 3 tbsp butter, divided, plus more for greasing
  • 8 oz cremini mushrooms, sliced
  • Salt and pepper, to taste
  • 3 tbsp all-purpose flour
  • 2 cups milk
  • 1/2 tsp garlic powder

Directions

  1. Preheat air fryer to 400°F.
  2. Spread Onion Rings in air fryer basket and cook according to packaging instructions.
  3. Preheat oven to 375°F. Lightly butter a small baking dish for the green bean casserole and set aside.
  4. Bring a large pot of water to a boil. Add the green beans and cook for 4 – 5 minutes, until tender. Drain, then transfer to a bowl of ice water to stop the cooking. Drain again and set aside.
  5. In a large skillet, melt 1 tbsp butter over medium heat. Add the mushrooms, season with salt and pepper, and cook for 5 – 6 minutes, until softened and browned. Transfer the mushrooms to a large bowl with green beans.
  6. In the same skillet, melt the remaining 2 tbsp butter over medium heat. Add the flour and cook, whisking constantly, for 1–2 minutes. Slowly pour in the milk, whisking until smooth. Cook for 4 - 5 minutes, until thickened. Season with garlic powder, salt, and pepper.
  7. Pour the cream sauce over the green beans and mushrooms and stir to coat. Transfer to the prepared baking dish and bake for 15 – 20 minutes, until bubbling.
  8. Remove the casserole from the oven and top with cooked Onion Rings. Serve immediately and enjoy!
