Meatloaf Sandwich with Crispy Onion Rings

Ingredients

  • 1 bag Cavendish Farms Quick Crisp Onion Rings
  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1 small yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tbsp tomato paste
  • 2 large eggs
  • 1/4 cup milk
  • 1/2 cup breadcrumbs
  • 2 tbsp parsley, coarsely chopped
  • Salt and pepper, to taste
  • 1/3 cup ketchup
  • 1 tbsp Worcestershire sauce
  • Sandwich bread, toasted
  • Dijon mustard (optional, for serving)

Directions

  1. Preheat air fryer to 400°F.
  2. Spread Onion Rings in the air fryer basket and cook according to packaging instructions.
  3. Preheat oven to 350°F.
  4. In a large bowl, combine ground beef, ground pork, onion, garlic, tomato paste, eggs, milk, breadcrumbs, parsley, salt, and pepper. Mix gently until just combined.
  5. Add the meat mixture to a greased 8-inch loaf pan or form into a 4-by-8-inch loaf on a greased baking sheet.
  6. In a small bowl, whisk together ketchup and Worcestershire sauce. Spread glaze over the top of the loaf. Reserve the rest for sandwich assembly.
  7. Bake until an instant-read thermometer inserted in the center registers 155 - 160°F, about 45 - 55 minutes. Rest for 15 minutes before slicing into 8, 1-inch slices.
  8. Spread optional Dijon mustard and reserved tomato glaze on the sandwich bread. Top with a slice of meatloaf and cooked Onion Rings. Serve with extra cooked Onion Rings on the side!
