Ingredients
- 1 bag Cavendish Farms Quick Crisp Onion Rings
- 1 lb ground beef
- 1/2 lb ground pork
- 1 small yellow onion, finely chopped
- 2 garlic cloves, minced
- 2 tbsp tomato paste
- 2 large eggs
- 1/4 cup milk
- 1/2 cup breadcrumbs
- 2 tbsp parsley, coarsely chopped
- Salt and pepper, to taste
- 1/3 cup ketchup
- 1 tbsp Worcestershire sauce
- Sandwich bread, toasted
- Dijon mustard (optional, for serving)
Directions
- Preheat air fryer to 400°F.
- Spread Onion Rings in the air fryer basket and cook according to packaging instructions.
- Preheat oven to 350°F.
- In a large bowl, combine ground beef, ground pork, onion, garlic, tomato paste, eggs, milk, breadcrumbs, parsley, salt, and pepper. Mix gently until just combined.
- Add the meat mixture to a greased 8-inch loaf pan or form into a 4-by-8-inch loaf on a greased baking sheet.
- In a small bowl, whisk together ketchup and Worcestershire sauce. Spread glaze over the top of the loaf. Reserve the rest for sandwich assembly.
- Bake until an instant-read thermometer inserted in the center registers 155 - 160°F, about 45 - 55 minutes. Rest for 15 minutes before slicing into 8, 1-inch slices.
- Spread optional Dijon mustard and reserved tomato glaze on the sandwich bread. Top with a slice of meatloaf and cooked Onion Rings. Serve with extra cooked Onion Rings on the side!
